Élise Dechannes “Absolue Terre” 2019 is a striking Blanc de Noirs from Les Riceys, crafted with uncompromising natural methods by Élise Dechannes. Produced from 100% Pinot Noir, this vintage is vinified without dosage (“Brut Nature”) and aged in terracotta jars for around 10 months, allowing the minerality of the vineyard to shine through. In the glass, “Absolue Terre” offers a bright golden tone with fine, persistent bubbles. On the nose, expect fresh white fruits, pear, apple, brushed with white flowers, a lightly toasted bread note, and subtle hazelnut and yeast characters. The palate is vivid and energetic: generous fruit, lively acidity, and a creamy texture, carried through to a long, dry, slightly saline finish that keeps things elegant and balanced. A product of biodynamic / organic viticulture, limited production, and true terroir expression, this is a champagne for those who enjoy purity, depth, and character. It pairs beautifully with shellfish, delicate fish, or fine Asian cuisine, something that complements freshness rather than overpowering it. Serve chilled (about 8-10 °C) to appreciate its nuance, and, if possible, give it a little time in the glass to breathe. Why we love this wine? Time stops with the first sip!
