Founded in 1993 by Ken and Teresa Forrester, the winery sits on the slopes of the cool‑climate Helderberg Mountain and has become one of South Africa’s most respected producers, combining sustainable farming, hand‑harvesting and careful cellar work to craft wines with balance, purity and regional character. The 2022 Sparklehorse Cap Classique is made from 100 % Chenin Blanc sourced from cool vineyard sites around Stellenbosch that retain lively acidity, ideal for sparkling wine. This bubbly is produced in the traditional Méthode Cap Classique style (South Africa’s equivalent of Méthode Traditionnelle), where the wine undergoes secondary fermentation in bottle and is aged on lees to develop fine, persistent bubbles and creamy texture. It typically spent 14–18 months on the lees, giving it a delicate mousse while preserving bright fruit character.
